I've been dragging on my food prep for the past few weeks. With busy weekends, I need to be more efficient with my time spent in the kitchen so I don't feel like I'm spending over an hour making dinner each night.

I've love relying on cooking more plant-based and veggie-packed meals, and have been leaning on some of my favorite pantry staples - pulses - that can be used in a variety of recipes. Pulses are the protein- and fiber-packed, healthy sustainable food category that lentils, beans, chickpeas and dry peas fall into.

Today's post uses 1 pound of dry green split peas as the base for our recipes. 1 pound of dry green split peas cooks up to about 6-7 cups of cooked split peas, which is what we need for our 3 recipes (plus a little wiggle room!). These split peas don't have much of a fanbase, but as soon as you try these recipes, you'll be happy you 'split' from a traditional split pea soup recipe!
